I was wondering If I'm looking for emulators should I try to get one per console or focus on getting the least amount of emulators?

Mame works well for arcade and consoles. Start there. Use another emulator if support is not good.

MAME is best for arcade games and some older consoles. Newer consoles work better on RetroArch which also can play arcade games.

There is the option to use a different emulator for each console but then you need to setup (and remember) the controls for each system. Using mostly MAME and/or RetroArch for many different consoles/systems will make it easier to remember and control.

Everyone has their own preference but I mostly use MAME, RetroArch, Demul and PCSX2.
