I think this is very difficult to automate because of how customizable Attract Mode is. Changing the name of an emulator implies the need to change the name of the generated romlist, and also go through all the displays to check if one is using that romlist. But it doesn't stop there: because there are collection romlists and a user can also change manually the emulator assigned inside a romlist, _all_ romlists should be run through to check and rename the emulator field.
I was planning to implement something like that in my AM layout, but I fear it can generate all sorts of issues, besides, the emulator name is not so important in the great scheme of things, since it's hidden from the end user most of the time
