you need an external script, that kills a specific task, if ESC is pressed.

Sure. There are three methods:

1) sleep timer
a simple sleep timer by command:
3000 means 3000 milliseconds (3 seconds);
half second (0,5 seconds) = sleep(500)

2) waiting for a certain dialog / dialouge / menu / window thats apperar to focus.
the script goes on, if a certain window gets focus.
winwait & winwaitactive
an example here

3) bring a active window to focus / foreground:
Opt("WinTitleMatchMode", 2)

the already started notepad editor gets to foreground / back to focus

you should test your settings in commandline / cmd before entering in AM:

you'll see that your paths won't work (spaces in names making problems; AM is case sensitive (under windows, you won't be able to create a folder with spaces at the beginning and ending)
correct path:
D:\ATTRACT\Emulators\Sega Genesis\gens.exe

your parameters are not correct placed:
correct :
"[romfilename]" --fs --quickexit

Are your games are listed in your romlists too?
found under your_attract_folder\romlists\your_display_name_of_your_emulator_system.txt

If they exists, try to generate your romlist again :
start AM > press TAB key > Emulators > your_display_name_of_your_emulator_system > Generate Collection/Rom List

Your mame problem:
same folder > there is a difference between, the name of game in romlist (name) and the name of romfile on data platform of windows (title).

It's recommended, to test an emulator system first on command line (cmd.exe). Most of emulator system works this way by correct command-line:
e.g. zsnes

path_to_your_emulator_system\emulator_system.exe -parameters_that_starts_a_rom path_to_your_roms\romfile.rom_extension

this command-line starts a specific snes-game directly:
C:\attract\EMU\zsnes\zsnesw.exe -m C:\attract\EMU\zsnes\roms\my_snes_game.smc

In AM use this config:
executable           C:\attract\EMU\zsnes\zsnesw.exe
args                 -m "[romfilename]"
rompath              C:\attract\EMU\zsnes\roms
romext               .smc

After setting the config in AM, and emulator or roms won't start, try to start AM via attract-console.exe
You'll see a window with many information. If something is wrong (path not found or something else), you'll see it in this window

I'm not working with retroarch. So I'm not sure why it doesn't work.
But I think the line workdir with C:\Emulators is probably not correct.
So delete this line / leave it empty/or it should point to D:\Arcade\Emulators\RetroArch too (retroarch probably create a config file; this config file should be there exists).

I'm sure, that your args-line is not correct. You have to set the -L parameter too:

RPI: it already "exists" (based on retropie and emulstation).
Windows: due to license problems, difficult. Deployment has limitations, because of different hardware driver (you have to add different driver packages).
Linux: this could work by offering a finished packed ISO or provide at least sh-scripts (linux shell scripts with the necessary commands and parameters)

It's necessary to start Hackmii, to install the Homebrew Channel this way:

a special game & a savegame exploit (old method; not longer necessary) or via wii pinboard exploit (letterbomb, bannerbomb, wilbrand) and WII MAC address.

there is a tool called UHG Downloader, to get the whole packet automatically (wii cios and so on).

After install homebrew channel, you are able to start homebrew like Wiiflow.

Wiiflow need a Plugin Packet.

Never tried to install linux directly

risk of virus attack becomes smaller when data are outsourced? Not really. Sorry ^-^
With a simple dos commandline command you see all connected drive letters. and this is a easy peasy stupid dos command.
a simple virus or an encryption trojan is more powerful and complex. so this will be checked certainly too ^-^
